I've gone for an almost antiphonal approach with the dynamics - you get a passage at full whack, and then suddenly it's a smaller group of players, a piano contrast.

Pitoni would have used this effect himself, with groups of singers in different parts of a cathedral. It's just as effective in brass, where the full band sound suddenly hits you out of nowhere."
